Questions people actually ask

• Does the menu really change every day?

  Yes, and not as a flourish. The kitchen works from what landed that morning, so tonight’s card exists only after the weighing on the quay.

• Can I see tomorrow’s menu?

  No, and neither can we. Tomorrow morning we will find out what came into the net.

• What if the dish I wanted runs out?

  On the site it goes quiet and tells you what took it. In the room we tell you before you sit down, not after you have ordered.

• What if nothing landed at all?

  It happens — it happened on 31 July this year. What is left is trofie with garlic, oil and parsley, and not much else. We would rather say so than pad the card with frozen fish.

• Is any of the fish frozen?

  Never for the raw plate: if it did not land this morning, we do not serve it raw. The rest is today’s or yesterday’s, and when it is yesterday’s the menu says so.

• Is there anything without fish?

  One real dish, not three apologetic ones. It is what you eat when the sea gave nothing, and it gets the same attention as everything else.

• How do you handle allergies?

  On the site you remove what you cannot eat and the dishes containing it stay on the page, quiet, naming the allergen. In the kitchen there is one fryer, so for gluten and crustaceans cross-contamination cannot be ruled out.

• Do you take cards?

  Yes. But this is a demonstration site, so nothing can be paid from here by any means.
